Sangiovese 2008
The 2008 Bodega Del Sur Calaveras County Sangiovese is a shining example of how this Italian variety is thriving in the climate of California’s Sierra Foothills. The grapes where picked at perfect ripeness at the Gerber vineyard near Murphys on September 23, 2008 and crushed into small fermentation bins and punched down twice daily until fermentation was complete 10 days later. The wine was inoculated with a yeast strain isolated from Italy called “Brunello Montelpulciano” After settling and racking the wine was aged in small French and American oak barrels for 18 months prior to bottling on May 27,2010. This wine has the great cherry and violet flavors with soft tannins and good acidity that are often found in Tuscan Sangiovese wines. This wine goes very well with many tomato based dishes and grilled meats.
